CCCC Cookies

I made these last week and have just about finished eating them - there's one left and i'm planning to take it to lunch with me. The recipe really does make approximately 3 dozen, so if you don't want that many, you may want to half it. Having said that, who would WANT to half it because they are just about the best cookies i've ever had. Like Mishka said, they're a bit crispy on the outside and oh so soft in the middle. Very yummy.

I also altered it a bit. I added 1/2 cup of chopped hazelnuts but the same quantity of chips (1 cup) but i mixed carob chips in with dark chocolate ones. The hazelnuts and carob added a nice touch. Otherwise, the recipe is perfect as is and it really does stay soft over time. Now that the heat wave's over here, i may be baking again soon!

Chocolate Chocolate Chip Cookies

I was supposed to go out tonight to hear a friend's boyfriend's band – but it was a bad day at work so I decided instead to stay home and make cookies!

The only modification was to use chocolate soymilk to mix with the flax seed.

I am not organised in life, nor the in kitchen. This is how my counter looks when I start making anything...

My high school drama teacher used to have us do a relaxation exercise before each class, and she used to tell us to envision ourselves as cookies melting on a cookie sheet. I still use relaxation technique whenever I get around to taking a yoga class. Luckily I don't often crave cookies, or I'd be in trouble!

The cookies are boy approved. And mishka approved! They're a little crispy on the outside and chewy on the inside. Just like a cookie should be.

A Book to Cook By

I just wanted to share with everyone this cookbook that I've really been enjoying lately. The New Farm Vegetarian Cookbook. You may all be familiar with it, but if you aren't, it's definitely work checking out. A couple of my favorite recipes are the Tofu Pot Pie and the Tofu Manicotti. There are also recipes for making your own soymilk, tofu, tempeh, and so forth. Another neat feature is the inclusion of health tips regarding vitamins, nutritional yeast, prenatal care, feeding young children, etc. I know you can get a lot of that stuff from other sources, but it's nice to have it all in one place.
There are a couple of yogurt recipes, but I'd say 99.9% of the book is vegan.

How About Some Simple Cookies?

Since a recipe is long overdue, i wanted to post one i just made for a work pot luck. It's a lovely 'chewy chocolate chocolate chip cookie' from ppk. Nothing beats a dual dose of chocolate! Yummy. I will share with you my version of it, with pictures, on the weekend, but if anyone is interested in some baking, try it out! It's worth the bit of heat in your kitchen. Here's the recipe.
