Paella!

That rice pudding (and the fact that I made it once for my Spanish class) has got me on a Spanish kick, so this week, how about paella? There are 3 different recipes over here - http://www.vegcooking.com/searchrecipes.asp - but if you find others, go ahead and share. There are tons that you can find from a quick search on vegan paella. I plan to look at a few and pick the veggies I like best. :)

Another thing I've never eaten. Is it okay to not use all the ingredients?

What would be a good thing to eat with paella? I mean, so it's not just a rice dish? Or will the vegetables give it lots of oomph?

It's definitely OK not to use all the ingredients. It's totally a throw stuff in the pan dish. It's also usually the whole meal - it typically has many kinds of seafood and chorizo and stuff. You can see one of the recipes has you using many kinds of veggie meat substitutes. Feel free to experiment.

looking around, it looks like ALL the recipes i can find have lots of vegetable variety, so i'm sure making substitutions would be totally good. i think i'm going to try to combine a couple different recipes + follow some other sites guidelines for paella (i've never had it before!)

mishka-one site i saw said that the paella was pretty filling, so it suggested a nice green salad.
