Still a week (at least) behind - Cauliflower Soup
YUM! This was so good - it's been really cold here and a nice warm soup was just what we needed for lunch. My only substitutions were - I had to use Red Potatoes - we actually grew some Yukon Gold in our garden - but they are long gone - and of course they are not sold here in TinyTown - along with Garam Masala - so I made my own - I mixed some cinnamon, cumin, caraway seeds, cloves, and nutmeg in the mortar and pestle - I didn't have any cardamom either - And Coconut Milk is not readily available here either so I made a substitute that I found at http://www.fatfree.com/archive/2001/jan/msg00099.html (what did we ever do without Google) and even with a couple of substitutions the soup was still great...This is the Coconut Milk substitute (doubled):
a teaspoon of artificial coconut flavor to a half cup of plain soy milk or rice milk, a tiny bit of sweetener and a little thickener (arrowroot or cornstarch). If you use vanillia or sweet soy/rice milk, omit the sweetener. Posted to fatfree digest V99# 080
This soup is pretty spicy - in fact next time - I'll probably halve the cayenne...
Here it is bubbling away - it actually got a lot thicker and more colorful after about 45 minutes simmering...
It was so smooth and rich - you can see how the folds hold their shape in the bowl...
