Sort of continuing the theme of last week, how about potato taquitos? It will give people a way of using up some of the remaining masa if they choose to make their own corn tortillas...
Ok, so I made these and will put up pictures later (I've got lots of stuff I have to do around the house now). I'd just like to share what I learned: - make sure the potatoes really are well-cooked! - add a bunch of spice, mine was a little mild - I bought corn tortillas (they're soft, and small, and come in a package of like 30 for $1.39) and I found that once I put the filling in, the tortillas start to break. I wasn't using toothpicks, but that wasn't the problem. You really have to pre-cook the tortillas, in oil, in order for them to keep from breaking open after filling. But that makes them a little harder to fill (what with them being hot and all). All I can suggest is that you use some utensils to both fill and fold the taquitos.
They were tasty, though, and I would like to try these again with beans. Oh, I put fake cheese in the ones I made, and that was a nice addition.
Let's try a recipe each week together! We can take turns picking a recipe online, so everyone has access. It'll help jazz up our food routines and make for some fun homework!

baking potatoes? those big ones.
do you think flour tortillas would work in this recipe?
Probably... small ones, though. At least, I guess they would roll up better, but the taste would be different.
