pupusas!
Do we feel like making
pupusas this week? I've never made them myself, but I've watched the women in Kensington Market make them often enough, it doesn't look too complicated. There's one odd ingredient,
corn flour, but hopefully it's not too hard for everyone to find. The places I order pupusas always serve them with a side of "cole slaw" called
curtido. What do you think?

I made these last night but I couldn't get the dough right... :-(
I tried em too (didn't take pictures, it was sort of a test) and had a bit of trouble. Having made tortillas with corn flour, I thought that the picture posted of the pupusas looked better than anything I would ever be able to make. Corn flour is so un-malleable.
So how do good pupusas come to be? Maybe I'll try mixing in a bit of wheat flour with the corn flour.
masa harina is much thinner than regular corn flour. is that what everyone is using? let me know what your problems have been, and i'll try to help. i've made them in the past, and had good results.

ha ha! Thanks for that into, I thought they were the same. I got the corn flour at a bulk store, I'll get some at the Latin grocer and try again. See the photo in my other post for the disastrous result.
I used masa harina. It specifically mentioned using it to make pupusas on the package.
