Not Pumpkin Pie. The other "P" word...
The Michelles Across North America got together on the west coast for a visit and some pierogy makin'!We jazzed the recipe up a bit, using sweet potatoes instead of white, adding - of course - much more garlic and a nice bit of flat leaf parsley.

Cute little balls of dough! We used whole wheat flour, which didn't make the pierogies as heavy as you'd think.
Kneading the little suckers. For some reason, Toronto Michelle kneaded each ball individually.
Portland Michelle (michelleknits) and the big mash of vegetables. Everything smelled wonderful and warming.

Mishka rolled out the dumpling dough into little circles.

The dumplings were so easy to work with, and pretty fast to make.

Pierogy sculpture seems fitting for the Portland location.
First they were boiled...
... and then fried. But we didn't take a shot of the frying as it was pandemonium! First they started to stick to the pan, then we had to transfer to another pan along with the hot oil.
And they turned out perfectly in the end.
Pierogies accompanied by steamed chard and Portland Michelle's maple orange tempeh (like candy).

I used sweet potato for mine, too. Did you look at mine? The orange is so pretty!! And warm, mashed sweet potato makes for great comfort food.
I read your's briefly while in Portland (I hearted the hearts!), and I missed the part where you used sweet potato and cilantro. Yum, smart girl. Maybe I'll try that when I make a batch next week :) I'm not usually a big fan of sweet potato, but it worked so well in the pierogies!
Oh, and Michelle C.'s tempeh was so tasty. I've never had so much tempeh in my life until I went to Portland! Perhaps one of these weeks we should have a tempeh recipe. Maybe I'll do a tempeh sandwich filler for next week!
I live for tempeh - i could eat it daily. I'm so glad you got to Portland, Mishka and those pieorgies look fantastic!
