Salads are Perfect with 40 Degree Weather
Well, since we're having such a heat wave here in Toronto, J and i thought that this week's cook-a-long recipe was perfect to try - no cooking/baking/frying involved! Normally, i'm not that excited about 'raw' tofu that's marinated for a mere hour, but this dish was scrumptuous!
Of course, we had to improvise a bit because we were also too lazy to go out and get some groceries. So, instead of ground flax seeds i used flax oil, and instead of cashews, i chopped up almonds and sesame sticks. We also didn't have any celery in the house. We put the salad on a bed of spinach and toasted some bread to go with it.
It really was a tasty surprise - flavourful, a great texture, and not too 'tofu-y.'
Unfortunately, i think i'll miss (or at least do late) next week's recipe, i'm off to Vancouver for a week - my first time there! I can't wait, especially to indulge in all the great vegan-friendly institutions there! See you when i'm back!

I think it's the second week - when are you goin? oh, pooey - i'm leaving this monday (the 7) and will be there until the 13. You?
this looks really good, vania. Almost like unscrambled tofu. I'll throw mine together tonight and have it for lunch tomorrow.
