Samosas

I used the recipe from Vegan with a Vengeance, pretty much.


Dough.

Potatoes after being cooked.


Cumin and mustard seeds frying.

Cumin seeds, mustard seeds, onion frying.

Mashed potatoes and edamame.

Cooked samosas. I kind of disregarded the directions in the book, and folded them like the pierogies.

They were okay. They actually got better with time...

they look tasty! ya got any tamarind sauce to go with them?

I have my pizza dough thawing in the fridge, and tomorrow I attempt Samosa Calzones! I will also be using edamame :)

Those look so good, I want to make some but will be late. Potatoes feel so good in the belly when it's cold outside!

It's pretty good. Not the best I've ever had, but it gets the job done.

The samosas actually tasted better at lunch time, after being microwaved. Strange!
