Almost Pumpkin Pie

I love pumpkin pie and was really excited to have it with my new Soy Whip but alas, it was not meant to be. J and i decided that we wanted to have a dessert without tofu so i ventured off to find another vegan pie recipe (is that against the rules?!). I found one that sounded good, but even following those directions as well as the recipe that was chosen did not help me with the baking part. The uncooked pie was decadent - like the carmelized part of pecan pie someone said - but the cooked part, well just never cooked. Even after an hour. It just was a nice thick pudding in an overbaked crust. Though, it was yummy. Just not the pie i dreamed about.

I learned my lesson i swear. I should have known better. Six years ago i spent half a year in India and celebrated my favourite holiday there - Halloween. Folks i lived with had heard of pumpkin pie and asked me to make it. Without a recipe. Without an oven. We used a sort-of cousin to a pressure cooker and can you believe it the taste was right - though not texture, exactly. But the day was not as bad overall - we had a costume party, candy free-for-all and my jack-o-lantern game was a definite success!

Thanks you the other posts i was able to find the easy ready-made pie crust and there was NO canned pumpkin at the store, just the pumpkin pie stuff that Mishka got. Yummy stuff, let me tell ya!
